FOOD: what are you having?

Mayo Lime Rice Bowls
I kind of invented it, very easy, 30 minutes to make
Flavors inspired by Elotes

Rice (I used instant brown rice)
Cilantro

Cooked meat of your choice (I used aldi pork carnitas because I'm not a meat master like other folks here)
3 avocados
Can of roasted tomatoes
Can of beans
Steamer bag of frozen corn

Mayo
Lime juice
Cotija cheese
Paprika or Chili powder

Cook rice

Meanwhile
Drain cans, put beans and tomatoes in pot and heat until thick. Heat up meat and corn. Cut up avocado.
Mix mayo and lime juice together.
Chop cilantro, mix into rice.
Put rice in the bowl and add the beans and tomatoes. Then add the corn, meat, and avocado. Add mayo/lime mixture. Top with cotija and paprika/chili powder.

The rice, tomatoes and beans were in the bottom of the bowl. This looks cool separate but probably tastes best all mixed together.
 
I also tried this recipe.
I used canned beets to save time (also fresh beets weren't even available.)

Next time I need to add more beets so it looks brighter pink and less like Pepto Bismol.

The sauce was alright-tasting but I think alfredo sauce is better. So next time, I'm thinking I'll make beet chicken alfredo.
Im definitely going to be trying this out! Always looking for new dishes.
 
Well, I already ate most of it, but I'm having my favorite gluten free breakfast.
Glutino english muffins with a sausage patty and American cheese. I usually also do an egg, half scrambled then cooked into a slab. I honestly like the gf English muffin better than I like this kind of thing with a not-gluten-free biscuit. I expect regular english muffins would taste good with it, too.

I just tried adding some honey to it. Really good, actually!
 
Not exactly food persay. BUT ☝️ It will make food nonetheless! I am so excited, I finally got a 5 burner gas range (been a long dream of mine. Never got to cook with flame other than past work places) I am absolutely stoked. Going to install it this weekend. And I will be able to retire my old electric stove (it struggles to keep up) I feel like a kid on Christmas moring. Finally!!!:wee

Not exactly food persay. BUT ☝️ It will make food nonetheless! I am so excited, I finally got a 5 burner gas range (been a long dream of mine. Never got to cook with flame other than past work places) I am absolutely stoked. Going to install it this weekend. And I will be able to retire my old electric stove (it struggles to keep up) I feel like a kid on Christmas moring. Finally!!!:wee

That looks awesome! DH has been wanting a gas stove since we moved into this house since he loves to cook with a Wok.

That looks awesome! DH has been wanting a gas stove since we moved into this house since he loves to cook with a Wok.
Yes! I have a carbon steel wok i bought a few years ago...does not, will not, and refuses to work well on my old-school electric coil stove. I guess they make a cast iron ring to set on the stove. Looking forward to using it
