Forced molting?

Agreed. Forced molt will never happen here. While it might be an economical advantage, I can not see doing so in the BY flock. Sudden loss of light can force a molt, as stated by RR. That IMO is far more humane, (if one were to force a molt) than either limiting feed or water. I raise my own birds so I can provide humane care, so they can help me manage my property, and so I can derive the benefits of meat/eggs that are raised humanely, and without chemical crap.
 
One size doesn't fit all. There are many different management techniques and many different reasons to chose a method.
I've only did the short day, early molt thing once (last year) but it worked well and in some climates, birds may go through this naturally due to extended seasons of cloudy/foggy conditions.
