found an egg buried in the nesting material

I'm not sure how long it has been there. The hens have only been laying for a few weeks and I have found a few in odd places. Should I have to pick through the pine shavings to see if there are some buried everyday? Maybe another hen came in after her and covered it by scratching around? How do I tell if it is safe to eat?
 
That happens once in awhile here too. Take a pot of cold water and put the egg in it. If the egg lays on the bottom it is fresh, if it tilts up a bit but still stays on the bottom it's a bit older, but still fine to eat. If it floats then throw it far, far away.
