Recently processed my freedom rangers. 1st time processing and eating my own chickens. Raised on pasture but given quality feed at evening. The meat was good, abit gamey on the legs, but good. The skin however was very off putting. Neither the smell, texture, or taste did I like. It was quite thick with a layer of fatty taste. Did I do something wrong? Or is it an acquired taste for rangers?
 
The old saying you are what you eat. If you want them more "Bland" pen them up and give them only commercial food. Just like deer hunting Mountain deer eating acorns and such don't taste as good as the valley deer eating corn, soybeans and alfalfa.

You eat the home raised for a while and you'll be disappointed in the store bought chickens as being plain. It is what you are used too.

I raised Cornish-X years back. Older, with more feed, have more fat. How old were yours? Strong taste from free-ranging, fat from lots of corn based feed. If you want less fat, put the feed down for 10-15 minutes then take it away.
 
Mine were about 10 weeks. Thing is it wasnt as much the fat as the smell of the skin, but I thank you for the the good feeding advice. I thought maybe i did something wrong processing.

You could try processing them younger. They will taste milder at 6 weeks, which is the age that Cornish-X are supposed to be processed. I kept mine to 10-12 weeks, they were almost 10 pounds dressed. They do not forage the way the red birds do -- they sit and eat!

Thanks for the advice. That may be the thing. Trying some cornish next.
