Freezing or Canning?

Freeze!!! Freezing retains FAR FAR FAR more nutrients than canning. PLus it is way easier!

I sometimes can a few jars of tomatoes just because I like how they look on the pantry shelf (I know, dumb!) but I freeze the bulk of the summer produce.

No, I don't get freezer burn on my tomatoes, mostly because they really don't last that long, we like spaghetti, chili ,lazonia, enchiladas, all take tomatoes so they go pretty fast, I also just slice my squash and freeze them, we like them cooked with a little butter onions and fried, or put them in a zip lock bag with some butter and microwave it it for a couple mins.
 
I can mostly, I always worry the electric may go out and ruin my hard work. I love seeing all the pretty jars of peas and beans. Maybe you can freeze and can, then decide which you prefer most. Gool luck!
 
That's funny Miss Prissy: I actually have some beets in my freezer that I have not tried yet! Just one bag, though, and they were roasted before freezing. Do you think I will be able to make borscht out of them or will they be too weird?

I guess I meant that I prefer freezing my peas, beans, zuke (grated for baking) carrots and tomatoes (and sauce).
