This is my first potato harvest. DANG those things love chicken compost. They're red potatoes of various sizes, and boy are they awesome. We harvested them and ate them within the hour roasted with olive oil, salt, and pepper.
 
You can store them unwashed in a cool, dry place for quite awhile. Wash before cooking. Ours made it several months last year (actually ate the last one at Thanksgiving). Can't wait till this years are ready.
 
Just make sure you store them so that they don't get any sun, that turns them green and not good. We dig ours in the early summer and store them all year under our barn in a wire cage.
A good way to eat them is to rub the peeling off and boil them in salted water, when they are done put them in a pan with plenty of melted butter turning to coat. Put them into a hot oven on about 450 for 20 to 30 minutes till crispy brown on the outside. You can't stop eating them.
 
If you keep them for an extended time they will begin to sprout. It is very important that you break off the sprouts asap. If you do this they will keep for many months. As stated in previous posts they need to be kept in a cool and above all dry location. I try to keep them off the floor with an airspace underneath.

Roasted!

I wash, quarter, season with seasoning salt, lemon pepper, then dot with butter. Into a 400* oven, turn every 15 minutes for 45 minutes to an hour depending on how well done you prefer them. Yummy!
 
We've roasted them twice to enjoy the potato-ness of them. I'm going to mash the bigger ones when my In-laws arrive.
 
I love the red potatoes at Boston Market. I don't know how they season them, but they are awesome. Im thinking there might be some dill in there.
