I know this is frostbite and I know all questions I need to know. But what is happening now? It appears as if one of his waddles is pealing. And there is white above the black. It seams to be turning darker as well.

Keep the coop dry to prevent it from getting worse.
He is inside in the heated garage with his hens now! He’s going back outside in a few days when it gets above freezing.
How long ago did the bite happen?
About 3 days ago.
That skin is now dead; so the scab is pealing off to reveal the fresh skin underneath, which, is going to be pink.

I've had a lot of frostbitten birds. That happens every time.

The white part is less bit tissue.
The black part will likely all fall off in time, could take a couple months.
Leave it be.
