If one wants to fry the large Cornish X breast meat and cook evenly, just place it down on your cutting board and cut it in half length wise like one would fillet a fish. One will have 2 nice fillets... cooking problem solved.

See... I love fried legorns at 12-14 weeks. Not much meat at all and hardly worth raising but the meat is awesome!
