Funeral luncheon menu

I guess I'm going to have a funeral luncheon tomorrow. My FIL passed away on Friday, and the funeral is tomorrow.

My husband has a very strained relationship with his family, to say the least. However, I am expecting at least 3 of my family members to attend to show support for my husband. Our family usually goes out to eat afterwards, but funds are a little tight right now. Plus, what if his family decided to show up - then we'd be stuck paying the tab maybe

He's one of 10 kids, so I'd have to mortgage my house! So as a compromise, I've decided to have an informal luncheon at our home. Whoever shows up, shows up. Whoever doesn't - who really cares!?

So, this is what I've decided to have. Please let me know if this menu sounds good or if I should adjust the menu:

Ham salad and egg salad sandwiches on assorted breads - pumpernickel, wheat, white bread with the crusts cut off
Veggie platter with dip
Amish macaroni salad (my DH's favorite)
Deviled eggs
Fruit salad - with blueberries and strawberries and whatever else looks good at the store
Potato chips, pretzels and dip
Cheese platter
Chiffon cake with cool whip and sour cream mixed together for icing and topped with fresh berries
Soda, coffee

Notice all of the eggs I'm going to be using?! What a budget stretcher they are! Just another reason to love those birds!
 
Sounds great to me.. We typically do about the same .. Stuff that folks can eat easily and and buy having the fruit salad oyu cover any vergetarians aswell...
 
Sorry about the loss of your FIL, and your husbands father. I treasure my FIL, he's a gem.

I think it sounds very generous, and as such, should be fine.

I would love to see a recipe for the Amish Macaroni Salad, please?

Wow. Around here you wouldn't have to plan a menu, you'd just pull out all the stuff neighbors and friends dropped off for the family. I guess bringing food is a southern thing?

Your menu sounds so good that my stomach is growling....
 
Thanks for your comments! I know my family will appreciate it. His family, who knows? I think I've come to terms with how they are, so I can honestly say I don't care if they come or not to the luncheon. I will of course invite them though.

Here is the recipe for Amish Macaroni salad. I got it off of www.allrecipes.com - my favorite recipe website, after BYC of course!

Ingredients
2 cups uncooked elbow macaroni
3 hard-cooked eggs, chopped
1 small onion, chopped
3 stalks celery, chopped
1 small red bell pepper, seeded and chopped
2 tablespoons dill pickle relish
2 cups creamy salad dressing (e.g. Miracle Whip)
3 tablespoons prepared yellow mustard
3/4 cup white sugar
2 1/4 teaspoons white vinegar
1/4 teaspoon salt
3/4 teaspoon celery seed

Directions
Bring a pot of lightly salted water to a boil. Add macaroni, and cook for 8 to 10 minutes, until tender. Drain, and set aside to cool.
In a large bowl, stir together the eggs, onion, celery, red pepper, and relish. In a small bowl, stir together the salad dressing, mustard, white sugar, vinegar, salt and celery seed. Pour over the vegetables, and stir in macaroni until well blended. Cover and chill for at least 1 hour before serving.

I live in a college town and our neighbors that do live here year-round pretty much keep to themselves. It works for me though - it's how I've been getting away with having roosters in town!
