What are the meat qualities of game chickens. I'm looking at maybe getting american games. shamos and other orientals look like leggy versions of cornish. do american games have a broad type breast, or are they scrawny like leghorns. Do they yield a decent amount of meat? What are your experiences with them.
 
I've never processed them before but I would say they have more meat then a leghorn. They are very compact birds. However if you're in a good area with a lot of forage, you won't have to feed them very much it all. They are aggressive foragers.

Hopefully someone else has some more experience in the qualities of the carcass.
 
I never butchered my game hens, but I can tell you that they felt as heavy as a RIR! We overfed them though...

I would say they have a good bit of meat on them for their size.
 
What about shape? are they shaped like gamebirds such as pheasants
 
I would say that they resemble a bit of a pheasant... a bit taller though.
