Grey x Grey should yeild grey chicks; With the Grey cock x wheaten hen you will most likely end up with with good quality Grey stags. As to gameness that all depends on the particular strains you are breeding; in otherwords it has nothing to do with the color of your birds.

Witch Grays are you talking about the "silver" or "Golden"
You might not get 100% Grays if there is a variety other than Gray in the background of the bird. There could be Black Breasted Red in the background of one of the birds and that could pop up in the offspring.​
 
See they should have Black Breasted Reds in them..
The Golden I have is out of a "Silver" Gray rooster and a Black Breasted Red hen.
So Im thinking you might get silver, golden and may be BB Reds.. A better percentage should be Golden...

My experience with greys in american gamefowl, whether it be golden or silver.. Is they are dominate down until about 5/8ths other "variety", and even then it's possible to be a grey... Now if your grey hens are sisters or closely related to the cock it is likely that breeding them together can throw other colors...

but never has been my experience, with gamefowl there will "always" be some other color in the greys.. Most of the time it is hatch (bbred) or kelso (wheaten) from what i've seen..
