Have started carrots, cantalope, and watermellon. So far it only looks like the carrits have begun growing

Those aren't carrots, they're one of the melons. Melons need heat to sprout seed, between 80 and 90. Carrots are a cool season crop, they probably won't sprout in a Texas summer.

Melons have a broad leaf. Carrots leaves are more lacey.

Temperature will dictate how long it takes any specific seed to sprout. Seed of cool season plants may not sprout at all when it's hot. Seed from warm season plants may not sprout at all when soil is cool. Each species has a soil temperature sweet spot. Cooler or warmer will slow germination.
 
That's not watermelon....at least not a commonly available variety. Honestly looks more like a squash family, but could be a honeydew. Watermelons have rounded lobed leaves.
