My chickens are located at my second home and currently we are gathering the eggs 2 times a week. It has been hot recently, so my concern is how long is too long to leave the egg before refrigerating them?

Without offering any scientific data, I just personally wouldn't leave them, especially in hot weather, for more than a few hours.

I've read that eggs actually don't require refrigeration to stay fresh, and some people leave them in a nice bowl on the table. (Like you've probably seen in old paintings). I don't know how long they will last this way though.

Welcome to BYC! While I don't know how many hens you have, the more you have the more problems will also have. If you have enough nests that is a good thing. If you should have a broody hen then she will cause problems for others wanting to lay.
It won't be easy to manage the flock without daily visits. Problems with broken eggs for example is just one example of things to come. This would result in egg eaters, and the problems could get worse without the daily contact the hens require for good management practices. Good Luck, however don't expect a problem free situation.....
