Give me your weirdest offal recipes!

Hi there. Just curious if anybody has any recipes for the lesser-used poultry offal? I always find myself disappointed that I can't seem to use the entire bird, hard as I try. So I'm looking to try out some exotic stuff. I mean, I've already made a few "out there" recipes (Candied Cockscombs comes to mind) but I'd like to get even more out there. Blood? Ovary? Lungs? Let's get creative, people. I'm the kind of person who'll try anything at least once (as long as it's not spicy, anyways).
 
I think you can fry the combs with batter... That's what they do in some countries, I think.

And the legs make good soup...

You could make blood sausage from the blood, but I don't have a recipe for it.
 
Kidney is good to fry like liver. It tastes very similar to liver, but milder and chewy.
You can use blood in soup broths to give it a metallic flavor, if you like that kind of thing!
Pretty much any edible organ can be chopped up, spiced up and used for tacos. They're also great for stuffing as well.

If theres anything that you just can't find a use for, feed it to the pets or back to the chickens. It sounds gross to feed chickens chicken but most of us here on BYC do!
