Pulled three cornish cross split chickens out of the freezer Friday for a BBQ with a few friends on Saturday.
This time instead of cooking the chicken completely on the grill I threw some wet cherry wood chips on the coals and put the birds on the grill for about 15 minutes. I then moved them to the nice size oval crock pot we have and placed them in there covered with BBQ sauce and let them cook for about 3 hours on low.
I never lifted the lid and just basically let them steam.
Well, if I do say so myself they were darn good and everyone complimented me on the flavor and the proof was in the pudding not a scrap left.
I really enjoyed it because I was able to sit and chat with my friends the whole whole time instead of watching the grill and waiting for the birds to cook through. The rest of the meal was also prepared, tomato, cucumber and onions in vinegar and oil (all fresh from the garden), macoroni salad, fresh sweet corn I cut off the cob and fresh bread and real butter. Simple, simple, simple but good, good, good.
