Sounds like a weasel too me...About 5 years ago we kept finding our birds with head trauma and it looked like they were chewed on, always happened at dusk and dawn. Finally found where a weasel will do this and once they find them they will not stop until all of the birds are gone. We eventually found a ton of tunnels and holes under the barn. We gave the last girl away waited 5 years and now we hope to have a weasel proof coop. Sorry for your loss.
Yes, they WILL come back until all the chickens are gone. Our dog chased ours out from under our coop, the weasel ran off and haven't seen him since then. We are sure that a hawk or owl got him; there's a lot of sparrow hawks and a family of owls lives around our house. I'm actually glad for them! They don't cause trouble for our chickens(yet), but they get rid of some predators.
Also, a good way to prevent weasels from tunneling under a coop is to build it with cement block under it(one under each corner).
