Gopher or mole digging under my coop

Frankly, I think it is more likely that it's your chickens doing that. Moles, rats and gophers make tunnels, not remove a wide swath of dirt as in the picture. Or, if it is outside your coop, (hard to tell from the pic) then it could be a canine.

It’s rats. I killed one last night. There is soil piled up outside the run adjacent to the excavated soil. The soil that is removed has fallen through the hardware cloth into the space that had been cleared underneath

Oh, that makes more sense then. Good luck with your rat control, they are persistent little buggers.

Caveat! I have no idea if this will work with rats burrowing near your coop but I hate the idea of poisons etc and would try it at least.
My auto mechanic told me that mice hate dryer sheets. He suggests putting scented dryer sheets in places rodents are trying to get in... Non-toxic but a serious deterrent! hmmm...
