GQF incubator thermostat replacement

I have a sportsman GQF incubator with electric thetmastat. The one with the tiny adjustment dial on the left side of the cabinet to the front. I believe it's malfunctioning because all of a sudden it's hearing the cabinet to 102+ then dropping to 90.

Has anyone replaced one with something you can buy at a local hardware store?

It should have a backup wafer thermostat. Unplug the electronic thermostat and plug in the wafer thermostat, then adjust as necessary.
