GRAPHIC PICS of my day learning to caponize

I almost forgot to post this pic here as well - our Thanksgiving capon. Ten month old hatchery GLW, for those curious.

Smoked one hour for flavor, then finished in the crock pot.

I hatched some crosses (standard Cornish X Black Ameraucanas), and the capons are ready for freezer camp. They're great foragers, so I've put off butchering them.

If you have the room for them to continue ranging, why bother with the freezer? With that cross, I suspect they'd make decent chick nannies, as well - especially the ones lower in the pecking order. Put those capons to work! LOL Here is ours, with his feathers.

Scrawny by Wyandotte standards, and he had absolutely no inclination to nanny chicks (we did try once). Even though he was the only full capon in that bunch, he still kept most/all of his tail feathers. Caponizing calmed him down, so that should tell you what kind of cockerel he was.

Hubby says I can schedule the next capon clinic. March of 2016 is the month. Spring Break is the target time. Send me a PM if you have a date that works for you. Available dates include March 12th through March 20: weekend before, week of, and weekend after Spring Break.

I'm going to prep two groups of birds so that we can have two separate dates. Send me a PM for information or to tell me what day(s) work best for you. I want to accommodate the largest number of people, and I know some of you will be driving a long way to get here, so the time to plan is now. Three months will be gone in a flash, so check and mark your calendar now.

I hope everyone is staying dry, has power, and stocked up just in case. We've had a lot of rain in Oklahoma, and many of our little rural roads are cut through streams and little rivers that reassert themselves when the skies open up. We're about 2 1/2 miles off pavement, and flooding has occurred in all four compass directions. I'm glad I don't have any pressing appointments today. Here's a photo of the road we live on at the point where the road intersects a small paved highway (photo taken by police officer facing south... his cruiser was parked on the highway). The pastures on both sides of the road are completely flooded. There were cattle on both pastures last Friday. I hope they were evacuated to higher ground before this winter mess hit.

Poco pollo We are too dry in California. That much water would be devastating here as well. To many burned areas and mud flows would destroy everything. I have not tried caponizing yet. Time got away from me and I put all chickens in freezer. I'm working on the HAL for 2016 New Years due date. 15 eggs looked ok at last candle. Hope all of you guys can stay dry and with power. It's been awful to watch the news coming in from back east.
