Hi fellow central Floridian! Welcome!
I know it's unhappy (and possibly unwelcome) news, but many have tried what you hope with the Cornish cross, and almost all have failed. The quirk of their genes that enables them to grow so fast also dooms their organs, especially the heart. I just want to make sure you are fully warned of the coming heartbreak in trying to keep a Cornish cross.
