			- split the quail along the backbone with kitchen shears.
 - Flatten by flexing breastbone
 - Spray or brush with olive oil
 - Sprinkle with garlic, salt, pepper and Italian seasoning
 - Grill on medium heat for 20 minutes, turning every 5 minutes
