I have signed up for chip drop but wasn’t sure about how long I would need to let the chips dry out.

Hopefully you have a place to store the pile of wood chippings.
Let it sit for a week or two then scrape the outer layer off the pile and spread it thinly in the run to dry further, do this every week or two until you get a couple few inches of chips in the run..

Have you tried local tree trimming services?
They may be able to respond more quickly.

I use something like deep litter with enclosed pen (because bottom is fenced). I use a mixture of large wood chips and straw, and clean top, and the small stuff sinks. I clean it twice a week (depending how dirty), and add fresh. Never had any issues. But only kept them in it, 1) when away because of predators or 2) weather, putting down straw or hay over snow allows them to go outside safely.
