Yes, mix those items together, turn them once in a while, and you’ll get some great compost.

You can add food waste, weeds, shredded paper/cardboard as you have it, but none on that is required.

Yes, Composting is very simple. You can even include eggs that have broken, but I scamble them so they don't recognize them. You don't want chickens to learn that eggs are food. Most kitchen, garden, or yard scraps, and weeds are good. Here is a video from a fellow who talks at Mother Earth News Meetings. His operation is huge, but think of it in a much smaller operation.
