Are GPs naturally protective of your flocks and livestock without any training to learn not to kill/harm them?

I have no experience, but from everything that I have read and seen, they do need to be trained. They just seem to be more receptive to guarding than other breeds. (Mind you, a lot is genetics, too so just purely being a livestock guard dog breed does not insure that they won't eat your chickens, etc.)

They are more commonly used with sheep or goats, but can be trained to guard poultry.
It's more likely to be successful than using other breeds, but one of the biggest problems is a TRUE LGD breed should be confined with the livestock, since they are more likely to guard the animals rather than the territory.

If not confined, they have a tendency to roam

There are three GPs that live close to us. None of them are ever with their respective flocks. They just roam up and down the road.

I have had GSDs and Dobies for more years than I can remember. I keep both breeds carefully fenced away from my horses. Even so they will chase along the fence line at every sudden move of the horses out in their own pasture. I keep my parrots clipped and well above easy reach or I would not have any parrots. GSDs have a terrific desire to please their master. They do not have any special feelings for your livestock unless you teach them the animals are YOURS and you WANT them protected. They will gladly do so, but only AFTER you've taught them what you want them to do. But left to their own devices, they are as likely to chew on your chickens, kittens, lambs, and other critters as they are to guard them. Ditto any stray mail person, delivery person, meter reader, etc. What they really want is to be WITH you. Then they will gladly guard for you. But they do not handle you leaving them with the animals. That is exactly opposite what they crave--namely, your attention! That is why they make such phenomenal personal protection animals.

My Komondors and Caucasian Mountain Dog are totally the opposite of yours. Being LGDs, they don't really want to please us. When called, they would turn their heads a little and give us this crazy look like what do you want from us. Sometimes, they would please us by coming over and giving us a little rub. However, they are really sweet dogs. I would never owe any other breed except LGDs. I love my Komondors and CMD. My favorite LGDs are Komondor, CMD, Central Asian Ovcharka, Southern Russia Sheepdog, Kurdish Kangal, true Tibetan Mastiff, and Black Russia Terrier. All big and aggressive and some are ferocious.

Any dog will need some training, some more than others, but most LGD's have the natural instincts, just need to be guided in the right direction, especially as puppies. Our Maremma is amazing, couldn't ask for a better dog!
