Those are to protect the dogs throats from predators in a fight/attack. The dogs live out with a group of animals that they protect, if for instance wolves were to come they would fight the wolves and the collars would protect them from a bite to the neck, as would their thick skin/fur.

All the schnauzers I seen were soft. Not wire. I don't own 1 but I thought they were smooth.
I'm always learning.

Shaved Schnauzers are a softer look, a proper groomed Schnazer (show styled) would be hand stripped with a bit of shaving, it leave the harsh top coat where as shaving take it off leaving the soft under hairs behind. Does that make sense?

Shaving schnauzers recks the wire coat it grows back soft, which is fine for pets. I didn't think there was any shaving what so ever with show dogs just stripping..?

You might be right about that! I do know breeders/showers that shave a bit of the sanitary and shave off the whiskers. But they could be the exceptions, it's sadly uncommon to see a breed that has it's coat in a "show style" anymore.
