Do the breeds have to be acknowledged by any kind of kennel club? I know that alot of the more rare breeds are not necessarily recognized. Also, is it ok if they are rare breeds, seldom seen in the US?

No they don't have to be acknowledged by a Kennel Club. Quite a few breeds we've done are still working on being recognized.
