Mottled: cockerel.
Of course, ages would help a lot. Maybe I am completely wrong!

Your Polish looks like a pullet to me too. But, I had one that looked much like that -- thought it was a pullet at 9 weeks, Then his nice neat crest started growing wild and crazy, he got red lines above his beak and a red streak across his cheeks (front to back) and his waddles grew fast and bright red.
