Guineas have begun laying! Hatched 4/22/20

So it appears two of my 4 original guineas have begun laying! I found these two eggs behind the coop today in their run. I suppose the same hen could have laid one yesterday and today, but I don't think they lay everyday at first. Also, these eggs look like they came from different ladies, as one is much spottier.

I decided since I already have plenty of chicken eggs i'm going to pickle these! Perfect little size for pickling. I LOVE pickled quial eggs and am thinking these will be just the same. Kind of odd that they basically started laying the same day, but pretty cool!

I want guineas too! Those eggs are so beautiful!
They only lay about 100 eggs a year, and in spurts depending on the season. They are extremely challenging and genuinely entertaining and rewarding. Do your research before making a decision for sure! If you think they are for you, scour the guinea forum! So much good info there.

Wow - you have some early girls!!! I have guinea eggs that I want to pickle too. Do you have a good recipe?

Yeah I wasn't expecting eggs until spring! I have gotten 5 eggs this week, all in the same spot. They have chosen right next to their coop in the grass. Works for me!!
I would have to x2 asking @Nabiki . Trying his/her? eggs is what made me want to do this!! I think the ingredients used are fairly common, but it's the super secret ratio of those ingredients where the magic happens! Hopefully they chime in soon!

I have a few. The ones that I sent @Tre3hugger do kind of have a secret ingredient, though.
1 cup hot sauce
1 cup vinegar
1 Tbsp Creole garlic spice (from James Marie Farms)

For the hot sauce, I use Crystal Louisiana hot sauce or Tabasco. I use apple cider vinegar.
I just did some new varieties last week so I'm going to have a couple of friends over for taste testing in two more weeks.
