Half processed birds -- What do I do??

Hello,

Today was our first time processing poultry and we overestimated how much we could get done and now we have questions as to what we should do.

The situation: We culled 6 drakes and 3 roosters this morning. They are partially plucked, have their heads cut off, but haven't been eviscerated yet. We can't work any longer today. Can we store the birds in a chilled cooler and finish the job tomorrow?

Bonus question:
We used wax to remove the feathers, but the first coat didn't remove all of them, so we did a second coat. This worked better, but now we are having a hard time making sure all of the wax is removed -- and we certainly don't want to eat it! Does anyone have advice on how to remove it all.
 
Yes you can finish tomorrow. Its actually a delicacy in some parts of europe to age birds a few days before processing. But a nightin the fridge will do no damage. Will make the eviscerating easier because the fat will be solid.
