Handling Chicks

Our first 5 hens and rooster were 6-8 months when we got them. They have never really let us pet or handle them. I have read on this forum where peoples chickens will literally jump in their lap and are really friendly. Is this more of a breed thing? We have a variety of breeds.

I am thinking it has to do with raising them from hatching. But our chicks, now two weeks old, are skittish. They are find when we finally get them in our hands and pet them. Is this pretty normal or do you find that your chicks are more friendly then this. Maybe it is just the "terrible two's"......

We have been holding them consistently since they hatched so we are all that they know.
