Why we cant peel our chickens eggs without tearing the egg up. Are they missing some kink of nutrient?

No, the eggs are too fresh. Store bought eggs are much older, have a larger air pocket and the inner and outer membrane have separated. Let the eggs sit a week or longer and they'll be easier to peal.

Another option is to put the eggs in the water, bring it to a boil and immediately remove from heat. Then immerse in ice water till the water reaches room temp and they'll peal easier.

I heard that adding sea salt to the boiling water helps. I started doing it, as well as letting them sit in cool water for a bit, and they do seem to be peeling a little easier.

Best thing to do is use older eggs. Fresh eggs are notoriously difficult to peel. The once bath thing is to stop the eggs from cooking too long and doesn't actually make them easier to peel. Just ask Alton Brown.

you're so right, Mortie! And I love Alton Brown!
Old eggs are the best way to make hard boiled eggs!

I second the salt addition. That seems to help us greatly with the peeling of our eggs. :)

I just bring a pot of water to rolling boil, no salt needed. Add eggs gently with spoon or tongs, let gently boil for about 15 minutes, then rinse in the sink with cold water. Never had any problems.

I still get egg stuck to the shell using fresh eggs.
This method is how I was taught to make hard boiled eggs!
