Hardboil egg

Are you saying you can't boil the egg or you can't get the shell off?

I don't think you'll ever have easy going getting the shell off a really fresh egg. For one that's a week or 2 old you boil (or steam) the egg then plunge it in iced water and let it cool. Then the shell should slide off.

If your egg's really fresh and that's all you've got to work with you could poach the egg until it's firm or break the egg into an oiled custard cup and steam it until it's cooked through. Either of those could be sliced or broken up for egg salad, for example.
 
Perfect hard boiled eggs :
Bring water to a full boil
Add heaping tsp of baking soda
Then gently add eggs
Time for 12 to 14 minutes
Remove and drop in ice water.

This works on the freshest eggs and the taste so much better than store eggs. My husband takes one in his lunch every day. Peel so nice!
 
I put my eggs in cold water and cover them. Bring them to a boil, let them boil for 1 min and turn the gas off and let them sit for 12 min. (perfect boiled egg all the time) Then I put them in ice water and they peel easy! I should try the baking soda and see if that makes a difference!
