Hatchery gendering question

I never thought about it till now, but how do hatcheries know the gender of their chicks weeks to months in advance in their inventory before it even hatches? Just curious
 
They vent sex chicks when they hatch. Im kinda curious however what do they do with extra male chicks that dont sell?
Since you said the ones that don't sell, we won't include meatie types or those otherwise included in "fry pan" bargain specials.

The more egg production type males that aren't worth it to *most* folks to grow out even for eating become cat, dog, or other pet food, garden fertilizer and the like.

Some hatcheries use theirs as "packing peanuts" to help keep other live chick orders warm.
