Hatching egg typical order size?

Had a question about selling hatching eggs. I sell locally but was wondering what yall's typical order size is. I am trying to keep a flock size that will accommodate the orders but they so far have varied between 1 and 10 dozen. What's a good flock size of heavy egg layers to keep for local orders?

Also what seasonality is there for selling hatching eggs?
 
I used to sell hatching eggs and chicks by mail order all over the US and even Puerto Rico.
Orders ranged from a dozen to 40 eggs normally. I used foam egg shippers and tried to encourage people to purchase numbers that would fit in the shippers which held 25 eggs. I'd say there were more orders of 20 eggs than other quantities.
They were year round but mostly spring.

For 10 dozen eggs, I think you would need at least 100 chickens to deliver eggs under 5 days of age. I tried to ship eggs that were 3 days or less. That way, even if they spent 3 days in transit, they would still be under a week old when setting could take place.
