Is there anything you guys watch out for especially for hatching out this time of year? Egg fertilization? does it decrease? How about mortality in chicks this time of year? Are they less hardy?

I hatch all year long, and it doesn't seem to mess with the fertility of the eggs at all here.

As long as the chicks have a warm place to go, they are fine.

I actually am hatching some right now

I have eggs in the bator, plus 2 broody hens right now. I haven't noticed any difference with fertility, but you do need to make sure they are kept warm, either in a broder, or with a hen
