I know silkies are the popular choice, but can Muscovy ducks be used to hatch chicken, duck, or goose eggs? I hear that they're good mothers so I was wondering

I don't see why not, but if you let it hatch non-waterfowl breeds, you will need to restrict the mother from going swimming or wading in water. If she goes in the water, the babies will just want to follow mommy and they will drown in a heartbeat.

Hmm, thats true. Might be safer to let muscovy's hatch the goslings and ducklings while silkies hatch the other ones.
