Have you 'canned' chicken?

I just canned from the 8 roosters I butchered a couple weeks ago...! the family loves the nice tender meat! I cooked them all in a large stock pot, allowed it to cool, then removed the bones. I canned the cooked meat, and it is delicious!

As far as the shelf life, I don't know, it's all gone in a few months. I will check my canning book and get back to you on it though.
We have canned beef for years, chicken is something new for us (less than a year). You can expect home canned meat to be very tender and as flavorful as you want it. It makes a great quick meal. Another reason it gets used up quickly.
 
We canned some of our old layers. Looked GRODY in the jar but man was it tasty! I followed the OSU extension instructions and I canned raw meat with the bones in narrow mouth quart jars. This year I'll bone them first and use wide mouth pint jars, or quart if we have a good garden year :) I wouldn't use the breast only.....it's all good canned! Enjoy!

my mother used to can chicken and salmon. we lived in the pacific northwest & dad would bring home these chinnook salmon that were amazing. i didn't appreciate it as a kid. i would love to have some now. we just don't have many salmon in our Texas waters.

I'm planning on canning my layers this fall when the newbies start laying. *sigh* I'm not looking forward to butchering my hens, but I'm not about to waste the meat! I think canning it is the way to go for older DP birds. I've canned beef before and it is tasty.
