Has anyone ever just set it and forget it a hatch in a Brinsea aside from lock down and stopping the turner? Wondering if all our "helping" and fussing and checking of temp ect does more harm than good with hatch rates.

When I set eggs in my Brinsea (or any of the other incubators for that matter) I never worry myself about temp or humidity after lockdown. My hatches turn out fine in mine. I don't go pulling chicks out either til the hatch is finished.
