Having a cow butchered and wondering if anyone here has made corned beef from fresh brisket

I tried the recipe using just salt and no nitrates. I think I will stick with the recipe I have, which also uses Tenderquick. The other was just tooo salty for my family and the grey color was offputting to us. To each his own, I guess. Iknow some people are sensitive to nitrates as a preservative, and others just choose not to eat anything with them added. Personally, I love the occasional hot dog, pepperoni pizza, and red corned beef and pastrami.

That's nice to know! Bow season here and so far no one has gotten a dear. The cow is still at the butcher.
Deer season stated Aug. 15 here. Been hot here,until now.Have not been but a few times saw a few but to far to shoot. Hope to get a few.to canned corned deer meat.
 
Canned corned venison... now that sounds good! I can regular venison to use for stew, soups, hot sandwiches and such, but corned sounds delish!
