does anybody care to offer advice on what the best kind of hay is

For what purpose? What is "best" depends on what one wants to use it for.

We are ranchers, and what I use is waste hay, hay the other animals left behind, or did not get used. It is pretty ragged mess. Works fine for bedding, for absorbing moisture in the run, and for nests.

I have heard of putting in good alfalfa hay, as in a small bale, in the early winter, and the birds can peck on it.

Yes, I go to our feed store and if I bring my own bag they'll let me have the 'leavings' out of the hay area....free is always good....
