I have a rooster that has just started shaking his head, what could be the reason for this? Mites?

Head shaking can mean a number of things that you will have to investigate. This time of year frostbite is a very common cause, ear mites, molting and feather growth, and other reasons. Frostbite can start with whitish marks on the comb or wattles, then turning brown or black. I would check his ears for mites, and if there are some, put a dropperful of hydrogen peroxide into the ear canal and clean it. Then put antibiotic ointment like Neosporin or just plain vaseline into the canal.
