Cotopaxi. Had to look that up. At least you have a post office. You will have more than your share of predators. Build for the big destructive ones. Bear, mountain lion and bobcat. A couple strands of hotwire should make them rethink their dinner plans.
Brahmas are nice birds. Good thing you understand they aren't prolific layers. Cochins are in the same boat and come in more varieties. Gold laced and silver laced Cochins are my favorite. I would get a few good layers to pick up the slack. Black australorp, barred rocks and easter eggers will all do fine with confinement and snow.
