Sorry about your hens but it does sound like a skunk or coon.
 
Did you look for foot prints? My guess would be a Raccoon, Raccoons generally do more killing than eating though. Sounds like what ever it was, it was pretty hungry!!! I've seen Bob-Cats feed mid day too. You might set up a live trap as redsoxs suggested. Good Luck
