Ours do lay in the winter, albeit half as many, and it's mostly the newer layers that will generally do that. It's said a hen has a destiny of laying a certain amount of eggs in their life, and if we alter lighting in the winter to try keep her laying, she'll possibly be less healthy and will stop laying earlier in life than those allowed to rest in the winter.
