Wife and I are thinking about getting a chicken coop, it houses 8, and wondered how much it would/could supply us with as far as eggs and occasional meat?

Welcome. If you are looking at pre-manufactured coops and it says 8, the real number is 3. I don't eat my chickens so I cannot tell you about meat, but as far as eggs - with 8 you can count on 5-6 per day, during summer months and 3-5 during winter months.
