what kind of chicken makes a good stewing hen with lots of fat for broth?
are they the cornish x rock type?

That list you have at the bottom would make good broth.
Generally any of the heritage type breeds ( BR, RIR, White Rocks, buffs etc. ) that are at least two years old are loaded with fat great for broth, chicken-n-dumplings, chicken noodle soup etc.
