We don't insulate our coop and it was wicked cold this winter. When temps got down into the negative numbers, we did put a 250watt, red heat lamp in the coop but it was more for my peace of mind than their comfort I'm sure.

As long as you get cold hardy birds, appropriate for your climate, they come pre-insulated and will do fine in the cold. Just be sure that there are no drafts AND that there is proper ventilation in your coop. Sounds like conflicting advice, but it's really not.
