Don’t start anything until you know it maintains a steady temp or you’ll kill your eggs. Get several external thermometers and run it empty for a few days to verify. Humidity or water in the air doesn’t affect temp. You need less heat produced or more heat dispersed (ventilation, less insulation) to lower temp.
Do you have a thermostat. The best way to regulate the temperature is to have a thermostat turn the heat off when a specific temperature is reached and them back on when the temperature drops to a certain preset level. With a thermostat you want an incubator that holds heat well so it is more stable but you also want good air circulation from outside so the developing embryo can breathe fresh air through the porous shell in the last half of incubation.
Do you have a fan to mix the air and maintain the same temperature at all places inside the incubator? If no fan, the elevation you have your thermostat and thermometer and the elevation of the eggs become very important as hot air rises. It gets trickier.
