Technically all but the sapphire gems are EEs as it is a generic term for non-pure bred colored layers, but they do indeed all look to be colored layers, with the exception of the sapphire gems.
Americana and EEs are pretty much the same thing and they typically have muffs and beards with a pea comb. They come in a variety of colors so I would say 3, 4, 9-10 are all the EEs/americana
Sapphire gems are usually blue/grey birds with a single comb and no crest, so 5, 7, 13. Starlight green eggers are a light brown bird with a single comb, so looks like that is number 11. Your barred crested birds look like the new “fancy egger” called a diamond duchess from Hoovers hatchery. Your blue crested birds are likely the sapphire olive eggers or similar breed. I have 2 of those myself.
Of all your birds, number 8 looks like it could be a crested cream legbar or simply one of the many crosses with CLB parents. Most colored layers with a crest and barring have a CLB parent, like the diamond duchess and sapphire olive eggers.
The first bird looks neat but doesn’t really fall into any category above. Quite possible the “EEs” you were given are all the crested birds seeing as diamond duchess and sapphire OE were not on your list.
