Help in separating chicks by breed!!!

I have 3 runs with individual housing, here are the breeds that I have now, and the ones coming in a week.
6 pullet Black Australorp
4 male Black Australorp (only ordered 1 but got sent 4, will keep only 1)
2 pullet Barred Rock
2 pullet Partridge Rock
2 pullet Silver Laced Wyandotte
3 pullet Columbian Wyandotte
5 pullet Blue Wyandotte (coming next week)
5 pullet Golden Wyandotte (coming next week)
1 Male Blue Wyandotte (coming next week)
1 male Partridge Large Cochin
5 pullet Partridge Cochin (coming next week)
5 pullet Salmon Favorelle (coming next week)
5 pullet EE's (coming next week)
3 pullet RIR (they are 3 weeks old, I am going to pick them up today, so I would like to figure this out)
1 mystery chick who probably is a EE not sure if female or Male, I will keep either way. So figure that it is an Male.
Now I am going to be selling some of the new chicks, and a couple of the male Australorp. I would like to know this for breeding as far as what will make good cross breeds. I hope that I have not confused you

I am not much help, but maybe getting this the top will produce answers.

Your Wyandottes can mix and match so I would put them all together in one coop. You will get a rainbow of babies out of that pen but they will all be purebred Wyandottes, just different colors.

EEs are mixes to begin with so you can match them up however you want and should get 50% colored egg layers out of those EE crosses no matter what the cross is.

Any crosses you get with your cochin roo will be feather legged, I think. I'm pretty sure feather legs is dominant.

The 'lorps, rocks, and RIRs are all layers so you could probably mix them up for a fine laying mix.

I don't really know anything about Favorelles but I think they are a laying breed too.

So maybe with three pens:

Pen 1: All Wyandottes
colors will be mixed up (I'm thinking you may get blue laced silvers from blue x silver laced but I could be wrong. If I'm not they would be cool to see) but all chicks would be purebred.

Pen 2: Rocks, Australorps, RIRs, Favorelles
Would make a good barnyard mix layers pen.

Pen 3: Cochins and EEs
I put the cochins and EEs together because you will then know which are your purebred cochin eggs and which are your cochin/EE x eggs since the EE eggs will be colored and cochin eggs will be normal. Plus, feather legged EEs are cute.

ETA: If your mystery EE turns out to be a cockerel I'm not sure if you would want to keep him and mess up the dynamic in pen 3. You could always put him into Pen 2 and then some of the layer babies would be EEs too. Keeping 2 roos in any of the pens could cause fighting.

Thank you, I am heading outside to do that now, I will follow your advice. I did have a EE that was bred by a Cochin Roo and I got a beautiful Roo with feathered legs. But all of my older chickens are gone due to prey and shock. The ones that were in shock went to a good home.
